One thing about Nigerian jollof rice is that it can stand alone.

Whether a protein or vegetable is available or not, only the jollof rice can make headlines. This is why you see people both rich and poor constantly, patiently waiting for jollof rice at every party or occasion. 100% of Nigerians hardly leave a party or an event without eating the party jollof, as long as the food hasn’t finished, they will wait.

Naija jollof rice is premium, reddish, not too strong or soft, all the spices are on point. The tomato is well fried.

However, when you see Ghana jollof rice on a plate, you will see the rice, a sauce by the side, some green leaves as vegetables and maybe fried plantain, including chicken or beef of course.

The first question is, what is the sauce doing there? Seems like they didn’t have so much faith in the jollof rice, hence, the jollof rice needed a support system.

After all these condiments in one plate called Ghana jollof rice, the food went into the mouth and faces squeezed. It seemed the tomatoes used were too fresh or ripe and maybe not well fried. The rice itself was too strong and ultimately soggy. Meaning, the oil in the food wasn’t hidden.

There are different variations of jollof rice across West Africa and Ghana jollof rice is just one of them. While there are some diversities in the ingredients and spices used, all versions of jollof rice are common by their flavourful and colourful nature.

Nigerian Jollof is often prepared using parboiled rice, tomatoes, onions, carrots and spices like thyme, curry, bay leaves. It commonly includes tomato paste.

Ghanaian Jollof is typically made with jasmine or basmati rice, tomatoes, onions, bell peppers and spices like cloves, bay leaves, nutmeg. Ghanaians tend to use more aromatic spices and fewer tomatoes compared to the Nigerians.

Nigerian jollof is still the best, this writing is from an African traveller not a Nigerian.

But what saved Ghana jollof rice is the grilled chicken, Ghanaians are excellent at that, the sauce and spices went into the chicken very well and it was well grilled. The grilled chicken in Ghana jollof rice is very delicious and it has just made this headline.
